Walk to the Old Quarter of Panama City, the historic center of San Felipe, declared a World Heritage Site by UNESCO in 1997, thanks to its eclectic fusion of colonial, neoclassic and French architecture. You will discover the area by going over the squares, streets and gravel roads and by visiting emblematic colonial buildings, churches and palaces. Some of them are the San José church, the Plaza Francia [Francia Square], the Embassy of France, the National Institute for Culture and the Anita Villalaz Theater. A few meters away, there is the Plaza Bolívar [Bolívar Square], before known as Plaza San Francisco, a small but lovely square. The Independence Square is other of the bastions of the Old Quarter, in fact, it is the most important square in the area, it is commonly known as Plaza de la Catedral [Cathedral’s Square]. Close to it, there’s the imposing City Hall. From this same site, we will visit the first artisanal distillery in Panama. And we will also take a sensory journey from the cocoa plant to the final product of 100% handmade chocolate. Lunch will be served during the tour. After breakfast, the tour starts at the Panama Canal, a magnificent work of engineering, in fact, it is the greatest and most expensive human feat of the time. The tour starts early in the morning when we pick you up at your hotel, then we go to the Chagres Park, a trip of about 10 minutes, once there we will board the dugout boats of our friends the Emberá Indians who will transport us from Lake Alajuela to the Chagres River, these two water sources are of great importance for the city of Panama and the functioning of the Panama Canal. During the journey of approximately 40 minutes, you will be able to observe the splendid jungle and if you are lucky, its monkeys, butterflies, herons and turtles. Upon your arrival, you will be received by the Indian Chief of the community who will tell you the history of the Tribe and its cultural wealth and that of its traditions. The Emberá are native of the Darién, who also come from the Chocò, Colombia. They live at the edge of the river in little communities of thatch-roofed palafittes named tambos, for counteracting humidity and avoiding floods. Men dedicate themselves to manufacture the famous pirogues, canoes made by shaping logs, used to navigate even during the dry season. Women make splendid baskets, plates and masks out of vegetal fiber and delicate knitting. They wear collars known as chaquiras that are made out of old silver coins. Overnight star at hotel. This route invites you to discover the good quality of Boquete’s coffee, because thanks to its weather, fertile soil and precise altitude, optimum qualities of refining are obtained; that makes it stand among the world’s best coffees. Transfer to Don Pepe Farm where one of the country’s best biological coffees is produced. Afterwards, walk through the plantations where some of its varieties are grown; among them stands the prestigious Geisha coffee. The employees harvest the fruits manually and carefully. The tour will continue in the area where the pulp is removed from the coffee cherry, washed and finally dried in the sun. This way, the particular traditional process plus the passion, dedication and experience give as a result an excellent quality product with unique characteristics that satisfy all palates.
